Simple and healthy first course that uses pumpkin, an autumn vegetable, and celery.Both are rich in antioxidants and low in calories. Celery, with purifying and diuretic properties, enriches this dish with its unmistakable aroma. Children love it too!

Ingredients (for 4 people)

Smooth tubes 300 gr.

Pumpkin 500 gr.

Celery 200 gr. (ribs and leaves)

Extra virgin olive oil 50 gr.

Onion 1

Salt to taste

Optional chili pepper

Parmesan cheese to taste

Wash the celery well. Chop the leaves and dice the ribs. Peel the pumpkin and cut it into cubes. Chop the onion.

Put the onion and oil in the pan.

Brown over low heat. Add chili pepper if you like. Omit it if children eat it too.

Add celery.

Cook for 5 minutes.

Add the pumpkin and 500 ml of water. Add salt.

Cook covered for about 20 minutes.

Heat the tubes and halfway through cooking, strain them and pour them into the pan with the pumpkin and celery.

Mix well and finish cooking the pasta. If you love the most soupy dish, you can also add a little of the cooking liquid from the pasta.

You can serve. If you like, add parmesan or pecorino cheese, but without it you will enjoy the flavor of the dish even more.
