This very quick first course will surely be liked. It is a cult of Neapolitan poor cuisine. Scarpariello derives from the term scarparo, that is, cobbler. It was a meal that, due to its speed of preparation, the cobblers made for the lunch break, using the cheese with which some customers of the shop paid the bill. The characteristic of this first course is the creaminess given by the cheese to the sauce such as to make it very tasty. To try!

Ingredients (for 4 people)
Spaghetti 400 gr.
Cherry tomatoes 400 gr.
Extra virgin olive oil 50 gr.
Parmesan cheese 50 gr.
Provolone del monaco or pecorino 50 gr.
Garlic 3 cloves
Basil
Chili pepper

Wash and cut the cherry tomatoes by removing the seeds. Grate the cheeses.

Brown the garlic and chilli pepper with extra virgin olive oil.

Add the cherry tomatoes.

Cook over high heat for about 7-8 minutes, in the meantime cook the spaghetti.

Remove the garlic and add the spaghetti al dente, plenty of basil and cheeses to the sauce. I used Parmesan and provolone del Monaco but pecorino is also suitable.

Stir by adding a little of the pasta cooking water so that the spaghetti will continue cooking in the sauce that becomes a delicious cream with the cheeses.

You can serve. The spaghetti are ready, quick to prepare, very tasty they will give happiness to your table!
