This first course is simply good, with eggplant, provolone cheese and cinnamon as ingredients, an aromatic spice that, in ancient times, was considered a plant with magical properties. This first course becomes magical, which will surely please. Try it!

Ingredients (for 4 people)

Rigatoni 350 gr.

Aubergine 400 gr.

Tomatoes 200 gr.

Provola or mozzarella 200 gr.

Parmesan cheese 30 gr.

Basil to taste

Cinnamon 2 teaspoons

Garlic 2 cloves

Extra virgin olive oil 60 gr.

Salt to taste

Cut the eggplant into chunks. Dry them well. You don't need to add salt.

Cut the provolone into cubes, wash and cut the tomatoes into chunks, removing the seeds. Chop the basil.

Sauté the garlic with the oil.

Add the eggplant.

Sauté for 5 minutes over high heat. Add salt.

Add the tomatoes and chopped basil.

Cook over low heat, stirring occasionally.

Pour the pasta, I recommend al dente, into the pan. Add the diced provolone cheese and cinnamon.

Stir over low heat for a few minutes, adding a little of the pasta cooking water, until the provola cheese spins.
