Simple and very particular condiment with a bright green color that has avocado as its main ingredient which with its exotic freshness combines with the sweetness of pine nuts and the unmistakable aroma of basil. To try!

Ingredients (for 4 people)

Avocado 1 maturo

Basil 20 gr.

Pine nuts 40 gr.

Extra virgin olive oil 1 tablespoon

Salt a pinch

Parmesan cheese 50 gr

Water 2 tablespoons

Wash the basil and open the avocado by removing the pit. Grate the Parmesan cheese. Put the basil, chopped avocado and pine nuts in the blender.

Blend everything by adding a tablespoon of oil, two tablespoons of water and a pinch of salt.

Add the Parmesan cheese and blend for another two minutes.

The pesto is ready. It can be kept in the fridge for a day. It should not be frozen as avocados do not store optimally, blacken and lose their bright green color. It must be prepared and eaten immediately to fully enjoy its goodness.

Heat the pasta, I prepared vermicelli but you can also use bucatini or short pasta and season them with pesto (calculate 1 tablespoon each).

Stir, adding a few tablespoons of pasta cooking water if necessary.

You can serve. Decorate with pine nuts and a sprinkling of Parmesan cheese if you like it but even without them they are exceptional!
