The amberjack also known as Seriola, a fine and tasty Mediterranean fish, is the basic ingredient of this simple and quick recipe.

Ingredients (for 4 people)

Mezzi paccheri 350 gr.

Sliced amberjack 350 gr.

Cherry tomatoes 200 gr.

Extra virgin olive oil 50 gr.

Parsley to taste

Basil to taste

Garlic 1 clove

Salt to taste

Cut the amberjack into chunks, removing the skin and bones. Wash and cut the cherry tomatoes. Chop the basil and parsley. I used amberjack slices but you can also use the whole small amberjack by filleting it.

Brown the garlic with the oil.

Add the cherry tomatoes and cook for 5 minutes. Remove the garlic.

Add the amberjack chunks and salt.

Cook for 5 minutes.

Add the chopped mezz paccheri, basil and parsley to the sauce.

Stir well to combine, and add a little of the pasta cooking liquid if it dries out too much.
