This soup rich in many vegetables embodies autumn flavors and colors, enriched by turmeric with its warm ochre color. Simple in preparation, healthy and tasty, loved even by children!

Ingredients (for 5-6 people)

Lentils 150 gr.

Savoy cabbage 300 gr.

Pumpkin 500 gr.

Celery 100 gr.

Tomatoes 200 gr.

Potatoes 250 gr.

Onion 1

Carrots 200 gr.

Salt to taste

Extra virgin olive oil 70 gr.

Curcuma q.b.

Wash and cut the potatoes, carrots, tomatoes and pumpkin into chunks. Wash and chop the celery and onion. Wash and cut the cabbage into strips. Wash the lentils.

Put the chopped celery and onion, carrots and potatoes in a large pot.

Sauté over low heat for 2-3 minutes. Add lentils.

Add the pumpkin and cabbage.

Cook for 2 minutes, turning everything over. Add the tomato, salt, 1 teaspoon of turmeric and 1 liter of water.

Cook over low heat for 40 minutes, stirring occasionally.

The soup is ready. Add a sprinkling of turmeric and enjoy it with homemade bread. It's good!
