Ingredients for 4 people
Vermicelli 350 gr.
Zucchini 400 gr.
Smoked salmon 100 gr.
Extra virgin olive oil 50 gr.
Salt to taste
Garlic 3 cloves
Parsley to taste
Cut the zucchini into half slices. Chop the parsley and cut the salmon into strips.

Brown the garlic with the oil.

Add the zucchini.

Cook over high heat for 10 minutes.

Heat the vermicelli and pour them into the pan with the zucchini. Add the salmon and chopped parsley.

Stir over low heat for 1 minute, adding a little pasta water if you see that it dries out too much.
