Fried zucchini enriched with lots of basil, the ingredients of this simple, quick summer dish, rich in flavor and a lot of nostalgia. It is my mother's recipe that made a dish superlative using simple ingredients, for the happiness of us children.

Ingredients (for 4 people)

Zucchini 300 gr.

Vermicelli 300gr.

Extra virgin olive oil 50 gr.

Garlic 2 cloves

Salt to taste

Abundant basil

Parmesan cheese to taste

Wash and cut the zucchini into half slices. Chop the basil.

Sauté the garlic with the oil.

Add the zucchini, chopped basil and finally the salt.

Cook over high heat for 10 minutes. At the end of cooking, remove the garlic.

Pour the vermicelli al dente into the pan with basil again.

Mix well by adding a little of the pasta cooking water to prevent it from drying out too much.

Serve, a sprinkling of Parmesan cheese if you like it and enjoy!
