A recipe with artichokes that is prepared quickly and, in its simplicity, is really good. You will definitely like it!

Ingredients (for 4 people)
Vermicelli 350 gr.
3 artichokes (if small even 4-5)
Extra virgin olive oil 50 gr.
Salt to taste
Parmesan cheese 20 gr.
Garlic 2 cloves
Parsley to taste
Pepper optional
Chili pepper to taste
Wash, remove the outer leaves of the artichokes and cut off the tips leaving the hearts. Remove the central hair, cut them in half and put them in a bowl with water and lemon slices to prevent them from blackening.

Cut the artichokes into strips. Chop the parsley.

Put the oil in a pan with the chili pepper and garlic.

Add the artichokes. Remove the garlic. Add salt and 100 ml of water.

Cover with the lid and cook for 15 minutes over medium heat.

Pour the vermicelli into the pan. Add the Parmesan cheese.

Stir gently by adding a ladle of pasta cooking water.

The vermicelli are ready. Serve with a sprinkling of Parmesan cheese and pepper. Simply good!!
