This is a first course seasoned with a sauce enriched with many vegetables and scented with paprika. Colorful, healthy and very easy to make.

Ingredients (for 4 people)

Tubettoni 300 gr.

Zucchini 150 gr.

Aubergine 200 gr.

Peppers 200 gr.

Tomatoes 200 gr.

Onion 1

Oil 60 gr.

Basil to taste

Paprika 2 teaspoons

Parmesan or cacioricotta cheese to taste

Wash and cut zucchini, eggplant, peppers and tomatoes into chunks. Wash and chop the basil.

Sauté the onion with the oil.

Add vegetables.

Sauté over low heat for 2-3 minutes.

Add the tomatoes and basil.

Add the salt and cook over low heat covered for 15 minutes.

Put the tubettoni in the sauce (you can also use mezzemaniche or pennette). Add paprika.

Mix well and if necessary add a little pasta cooking water if it dries out too much.

You can serve. A sprinkling of Parmesan or cacioricotta cheese and enjoy your meal with a mix of colors on your plate!
