Today I prepare the "scrambled tripe", a tasty and rich dish that has eggs as an unusual ingredient, as an accompaniment to tripe. It's worth a try!

Ingredients (for 4 people)
Clean tripe 800 gr.
Tomato puree 700 ml
Carrot 1
Onion 1
Chili pepper to taste
3 whole eggs
Parmesan cheese to taste
Salt to taste
Slowly brown the chopped onion, chilli pepper and carrot cut into small pieces in a pan.

As soon as the onion is golden, add the tripe.

Cook over medium heat for 10 minutes.

Add the tomato, salt and cover.

Cook over medium heat for 20 minutes.

To complete the recipe, add the beaten eggs.

Continue cooking and as soon as the egg has set, the tripe is ready.

You can serve, a sprinkling of Parmesan cheese and... Enjoy your meal!
