Summer dish, quick to make, just long enough to cook the pasta. Very good for its Mediterranean flavor and the scent of the sea. Try it!

Ingredients (for 4 people)
Tortiglioni or penne
Zucchini 200 gr.
Anchovies in oil 4 fillets
Garlic 1 clove
Abundant basil
Cherry tomatoes 150 gr.
Oregano to taste
Capers 20 gr.
Salt to taste
Pecorino 30 gr.
Wash and cut the zucchini into half slices, chop the basil and cut the cherry tomatoes. Brown the oil, garlic, anchovies and capers in a pan.

Pour in the zucchini and sauté for 2 minutes over high heat.

Add oregano.

Add the cherry tomatoes, basil and salt.

Cook for 7-8 minutes over high heat.

Pour the pasta into the pan.

Add a little of the cooking liquid from the pasta -if you see that it dries out too much- and the pecorino cheese.

Mix well.

The dish is ready! Enjoy your meal!
