This rustic very simple to prepare will certainly be appreciated by everyone, young and old, for its delicate goodness. The combination of cheese and pears is always a winner!

Ingredients (for 6-8 people)
Flour 00 350 gr.
Extra virgin olive oil 150 gr.
Salt 2 teaspoons
Pear 2 (300 gr.)
Emmenthal 200 gr.
Pecorino 50 gr.
3 whole eggs
Yeast 1 block of 25 gr. o 1 sachet of freeze-dried yeast
Milk 150 ml
Dice the Emmenthal cheese, grate the pecorino cheese. Peel and dice the pears.

Put the flour in a bowl adding the salt and oil.

Add the eggs and grated pecorino cheese, mix well either by hand or with an electric whisk.

Dissolve the yeast in warm milk and add it to the dough.

Continuing to knead the dough, add the pears and diced cheese.

Work for a few more minutes.

Grease and flour a 26-28 cm diameter pan and pour the dough into it.

Let rise in a warm place or in the oven until the volume has doubled.

Bake at 160* for 30 minutes and until the cake turns golden brown.

Let it cool and place it on a serving plate.
