For Christmas Eve or New Year's Eve I prepare the traditional spaghetti with clams with an unusual addition: eggplant. Quick to prepare, it is truly a dish for special occasions.

Ingredients (for 4 people)
Spaghetti 350 gr.
Clams 500 gr.
Aubergine 2 (300 gr.)
Garlic 2 cloves
Parsley to taste
Basil to taste
Extra virgin olive oil 60 gr.
Salt to taste
Wash the clams well and put them to drain. Wash and cut the eggplant into chunks.

Sauté the garlic and oil.

Add the eggplant in chunks.

Brown over high heat for about 10 minutes. Add a pinch of salt.

Add the clams.

Cover and cook for 5 minutes over high heat.

Pour the spaghetti strictly al dente into the pan. Put a little salt in the pasta cooking water for the flavor given to the sauce by the liquid released by the opening of the clams. Add the chopped parsley and basil.

Mix well and, if you see that it dries out too much, add a little of the cooking liquid from the pasta.

You can serve. Enjoy your meal!
