It is a winning combination of lamb and artichokes: two ingredients that make a dish that you can prepare for a day of celebration important and very tasty. I will prepare it at Easter.

Ingredients (for 4 people)

Scialatielli 350 gr.

Lamb 250 gr.

Artichokes 2 (3 if small)

Extra virgin olive oil 60 gr.

Salt to taste

Garlic 2 cloves

Onion 1

Pecorino 20gr.

White wine 100 ml

Parsley to taste

Pepper to taste

Dice the pieces of lamb by removing the fat and pieces of bone. Clean the artichokes leaving the heart, removing the central hair. Cut them into thin slices and put them in a bowl with water and lemon slices to prevent them from blackening. Slice the onion. Chop the parsley.

Put the oil, onion and lamb in a pan. Brown over high heat.

Add the wine and 150 ml of hot water.

Simmer for 30 minutes. At the end of cooking, the onion will become a golden cream.

Put oil, garlic and artichokes in a pan.

Sauté for 10 minutes, add salt and remove garlic.

Pour the scialatielli into the pan with the lamb sauce. Add the artichokes with its sauce, parsley and pecorino cheese.

Stir everything over high heat for 1 minute.

Serve, a sprinkling of pecorino cheese and pepper if you like it and... Enjoy your meal!
