I love pasta dishes and this is definitely one of my favorites. The protagonist are the artichokes enriched with sausage.

Ingredients (for 4 people)

Scialatielli 350 gr.

Artichokes 3

Sausage 250 gr.

Extra virgin olive oil 50 gr.

Garlic 2 cloves

Pecorino cheese to taste

White wine 100 ml

Parsley to taste

Chili pepper to taste

Salt to taste.

Clean artichokes by removing the outer leaves and cutting the tips leaving only the hearts that you will cut in half by eliminating the central hair. Soak them with water and lemon slices.

Cut the artichoke hearts into strips and remove the sausage from the casing.

Brown the garlic with the oil and chilli.

Add the sausage removed from the casing and sauté for 1 minute.

Add the artichoke pieces. Remove the garlic.

Stir and add 100 ml of white wine and let it evaporate. Add 100 ml of water, salt and simmer for 20 minutes.

Pour the scialatielli into the sauce and add the chopped parsley.

Stir gently by adding a little of the pasta cooking water, if you see that it dries out too much.

Serve, a sprinkling of pecorino cheese and enjoy!
