An unusual recipe that has as its basic ingredient polypins enriched with a sauce with cherry tomatoes, slightly spicy, made full-bodied by anchovies and softened by the delicacy of raisins: a truly unique combination of flavors. To try!

Ingredients (for 4 people)
Polypins 1 kg.
Cherry tomatoes 150 gr.
Extra virgin olive oil 60 gr.
Anchovies in oil 4 fillets
Chili pepper to taste
Raisin 20 gr.
Basil to taste
Salt to taste
White wine 50 ml
Garlic 2 cloves
Clean the polypins well, wash them and put them to drain in a colander to remove excess water. Sauté the oil and garlic with the chilli pepper in a pan.

Add the anchovies.

When the anchovies have dissolved in the oil, remove the garlic and add the polypins. Brown well over high heat and add 50 ml of white wine. Let it evaporate.

Add the cherry tomatoes, basil and raisins (which you have previously softened in a small bowl of warm water for 15 minutes). Season with salt.

Cook covered for 20 minutes. The octopuses will be cooked when the tines of the fork easily enter the base of the tentacles.

The polypins are ready. You can serve and enjoy this fragrant goodness of the sea. Enjoy your meal!
