Autumn first course, simple in the preparation that combines the delicacy of the pumpkin with the creaminess of the potato. To try!

Ingredients (for 4 people)
Yellow pumpkin 700 gr.
Potatoes 250 gr.
Mixed pasta or tubes 250 gr.
Diced sweet bacon 80 gr.
Oil 50 gr.
Onion 1
Rosemary
basil
Sale
Parmesan cheese 30 gr.
Wash and dice the pumpkin, wash and dice the potato, slice the onion.

Put the onion, bacon and oil in a pan.

Brown over low heat.

Add the potatoes and cook for 2 minutes over low heat.

Add the pumpkin.

Combine the rosemary, chopped basil, 100 ml of water and salt.

Cover with a lid and cook for about 20 minutes.

Heat the pasta very al dente and add it to the sauce. I used tubes but any type of short pasta is fine.

Add some Parmesan cheese.

Stir and always over low heat mix everything. You can plate up and enjoy this simple and tasty dish.
