Simple, healthy and tasty recipe that has only one protagonist: pumpkin, queen of autumn vegetables.
Rich in vitamins and fiber, it is antioxidant, due to the presence of beta-carotene, and low-calorie!

Ingredients (for 4 people)

Celery or tubettoni 350 gr.

Pumpkin 600 gr.

Extra virgin olive oil 50 gr.

Garlic 2 cloves

Parsley to taste

Rosemary to taste

Chili pepper

Salt to taste

Parmesan cheese to taste

Remove the skin from the pumpkin. Cut it into cubes and wash it well.

Brown the garlic with the oil and chilli.

Add the diced pumpkin and rosemary. Remove the garlic and add the salt.

Cook covered for 15 minutes.

Heat the pasta al dente and pour it into the pan. Add the chopped parsley.

Mix well and if you see that it dries out too much, add a little of the pasta cooking liquid.

The dish is ready. Add a sprinkling of Parmesan cheese if you like. You can plate up and enjoy this simple rustic dish!
