Healthy and tasty, this autumn first course is quick to make. The basic ingredient is cauliflower enriched with provolone del monaco, a seasoned cheese with a unique flavor. This was my mother's recipe. To try!

Ingredients (for 4 people)

Pasta (gnocchi or tubettoni) 350 gr.

Cauliflower 500 gr.

Extra virgin olive oil 50 gr.

Salt to taste

Chili pepper to taste

Provolone del monaco 100 gr. or other aged cheese

Basil to taste

Garlic 2 cloves

Cut the cauliflower by separating the florets. Wash it.

Boil the cauliflower florets in a large pot with plenty of water, as you will also need it to cook the pasta. Add salt. From boiling, cook for 5 minutes.

Put the oil, garlic and chilli pepper in a pan.

Sauté the garlic.

Pour the gnocchi into the pot together with the cauliflower, which will continue to cook.

Once the pasta is cooked, pour it into the pan. Remove the garlic and chili pepper pieces. Add the basil and grated provolone del monaco. Add a little pasta cooking water – if you see that it dries out too much.
