An octopus sauce so good that you will surely like it. An octopus bolognese, rich in flavor and color for your festive table!

Ingredients (for 4 people)
Octopus 500 gr.
Paccheri 350 gr.
Onion 1
Celery 1 branch
Carrot 100 gr.
Extra virgin olive oil 50gr.
Basil
Salt to taste
White wine 100 ml
Tomato puree 750 ml.
Clean the octopus well, cut it into small pieces. Chop the onion, celery, basil and carrot.

Brown the oil in a pan with the chopped carrots, celery, basil and celery.

Add the octopus in small pieces.

Sauté, add the white wine and let it evaporate.

Pour in the tomato puree. Cook over low heat, covering with a lid, for about 30 minutes.

Heat the pasta and pour it into a large pan. Add the meat sauce.

Stir gently for 1 minute and, if you see that it dries out too much, add a ladle of pasta cooking water.

Plate up and enjoy this delicious dish!
