Ancient and timeless recipe of Neapolitan cuisine.
Appetizer, side dish or main course, good both hot and cold and much better the next day.
So many memories related to this dish that I used to prepare next to my mother. Try it!!

Ingredients for 5-6 people
Aubergine 5 (of the same size)
Extra virgin olive oil 100 ml (for frying)
Salt to taste
Stale bread or sliced bread 200 gr.
Eggs 2
Pepper to taste
Pecorino 50 gr.
Parmesan cheese 30 gr.
Mozzarella or caciocavallo cheese 150 gr.
Flour to taste for breading
For the sauce
Peeled tomato 700 ml
Extra virgin olive oil 50 gr.
Salt to taste
Garlic 1 clove
Basil to taste
Wash and cut the aubergines in half and put them in a pot with water and salt. Cook, from the moment of boiling, for five minutes.

Drain the eggplant.

Prepare the sauce by browning the garlic in oil and adding the crushed peeled tomato.
Add salt and cook for 7-8 minutes.
Remove the garlic.

Empty the eggplants, putting the pulp further to drain, which you will eventually squeeze by hand, trying to remove excess water.
Soak the bread in water and squeeze it well. Cut the mozzarella into sticks to place it on the base of the eggplant shell.

Put the squeezed eggplant pulp in a bowl to which you will add the bread, pecorino cheese, eggs, salt and a sprinkling of pepper.

Mix the dough well and fill the eggplant shells by placing the mozzarella on its base.

Flour the eggplants.

Fry the eggplants for a few minutes, browning them on both sides.

The eggplants are ready to be assembled and baked. You can also not fry the eggplant and bake them directly without flouring them.

Prepare a baking sheet, pour a part of the sauce on the bottom. Place the eggplant on top.

Add the remaining sauce. Sprinkle with Parmesan cheese and add chopped basil.

Bake at 180 degrees for 20 minutes.

The dish is ready! A bit laborious in preparation but the result will pay off, enrich your table and make your guests happy.
