An unusual, very simple recipe that will enrich your table with its goodness during the Christmas holidays. I will prepare it on New Year's Eve!

Ingredients (for 4 people)

Linguine 350 gr.

Stockfish 400 gr.

Cherry tomatoes or peeled tomatoes 1 can of 400 gr.

2 whole sun-dried tomatoes

Parsley to taste

Extra virgin olive oil 50 gr.

Salt to taste

Onion 150 gr.

Chopped pistachios 2 tablespoons

Optional chili pepper

Cut the stockfish into pieces, removing the skin and bones. Chop the onion and parsley. Cut the sun-dried tomatoes into strips that you have soaked in warm water for 10 minutes. If you use tomatoes in oil it is not necessary.

Brown the onion with the oil and, if you like, the chilli.

Add the tomatoes and sun-dried tomatoes. Cook for 5 minutes.

Add the pieces of stockfish. Cook for 5 minutes over high heat.

Gently turn the pieces of stockfish.

Cover with a lid and cook for 10 minutes. At the end, add the chopped parsley.

Heat the linguine al dente and pour them into the pan with the sauce. Add two tablespoons of chopped pistachios.

Stir gently over high heat and, if it dries out too much, add a little pasta cooking water. You can serve.
