This second course based on fish fillets flavored with orange and flavored with capers and olives is simply good. I used frozen sea bass fillets but you can also use plaice, cod or sea bream, always with a truly exceptional result.

Sea bass fillets 4

Oil 50 gr.

Capers 10 gr.

White olives 50 gr.

Breadcrumbs 30 gr.

Parsley to taste

Garlic 2 cloves

Orange 1

Salt to taste

Pour the juice of an orange into a bowl, add the oil and a pinch of salt. Mix well.

Put the previously washed and drained sea bass fillets in a bowl and pour in the oil and orange juice emulsion.
Add the minced parsley and garlic.
Refrigerate for 1 hour.

Mix the breadcrumbs, capers and olives cut into small pieces and a few tablespoons of sauce in which you have macerated the fillets in a bowl.
Mix well.

Remove the fillets from the fridge and prepare the rolls by placing a tablespoon of dough at the base of each fillet. Roll them up and secure them with a toothpick.

Place them in a baking dish, add a pinch of salt, the remaining mixture and maceration sauce with a drizzle of oil in addition.
