A very simple very tasty recipe that I dedicate to those born under the sign of Capricorn, determined to compete and fight to achieve concrete goals with tenacity and honesty at the base. A beautiful sign that honors above all loyalty in friendship. For this reason, what more suitable recipe: a few but certain ingredients that combined harmoniously give life to a tasty and satisfying dish!

Ingredients (for 4 people)
Fusilli 350 gr.
Sausage 250 gr.
Aubergine 2 (300 gr.)
Tomatoes 250 gr.
Extra virgin olive oil 70 gr.
Onion 1
Basil to taste
Chopped pistachios 2 tablespoons
Salt to taste
Pecorino 30 gr.
Wash and cut the eggplant into cubes, remove the sausage from the casing and cut the tomatoes into small pieces (failing that you can also use peeled tomatoes) removing the seeds.

Brown the chopped onion and sausage with 20 gr. of oil.

Add the tomatoes and salt.

Cook covering with a lid for 10 minutes over medium heat.

Brown the aubergines in a pan with the remaining oil. Add salt.

After the aubergines have browned, add them to the sauce.

Let it flavor for 5 minutes over low heat.

Heat the fusilli and pour them into the sauce. Add the chopped basil, pistachios and pecorino cheese.

Stir over low heat for 1 minute.

You can serve. A sprinkling of pecorino cheese and pistachios again and enjoy!
