Today I propose a recipe based on artichokes and cherry tomatoes that I often prepare and that is one of my favorites for the speed and simplicity of its realization.

Ingredients (for 4 people)

Fettuccine 350 gr.

Artichokes 3

Cherry tomatoes 250 gr.

Extra virgin olive oil 50 gr.

Parsley to taste

Garlic 1 clove

Chili pepper to taste

Pecorino cheese to taste

Cut the cherry tomatoes into wedges by removing the seeds. Clean the artichokes by removing the hard outer sheets and cutting off the tips.
Cut each artichoke heart in half, removing the central fuzz. Put them in a bowl with water and lemon pieces to remove the bitterness.

Brown the oil, garlic and chilli pepper in a pan.

Add the artichokes that you have removed from the water and cut into strips.

Brown for two minutes, add the cherry tomatoes and chopped prezemolo. Remove the garlic. Add salt.

Cook covered for 15 minutes.

Heat the fettuccine or even some tagliatelle and pour them into the sauce.

Stir well over low heat, adding a little of the pasta cooking water if you see that it dries out too much.

The fettuccine are ready. A sprinkling of pecorino cheese if you like it and... Enjoy your meal!
