Ingredients for 4 people
Farfalle 350 gr.
Zucchini 300 gr.
Arugula 100 gr.
Tomatoes 200 gr.
Extra virgin olive oil 50 gr.
Salt to taste
Onion 1
Basylic to taste
Pecorino 30 gr.
Clean the arugula and wash it by draining it.
Wash and cut the zucchini into half slices, wash and cut the tomatoes into small pieces, removing the seeds.
Chop the onion.

Sauté the onion with the oil over low heat.

Meanwhile, in a large saucepan, put the water and rocket to boil.
Add salt.

Add the zucchini to the browned onion. Cook for a minute over high heat.

Add the tomatoes, chopped basil and salt.

Cook covered for 10 minutes.

From the boil of the pot with water and rocket wait 5 minutes and then add the farfalle (you can also use vermicelli or rigatoni).

Pour the farfalle al dente into the pan, keeping a little of the cooking water.
Add the pecorino cheese.

Stir to mix over low heat for 1 minute.
