It is not Carnival if we do not taste the chiacchiere, a humble but unmistakable dessert for its crunchy delicacy.

Ingredients

Flour 00 500 gr.

Whole eggs 3

Sugar 50 gr

Olive oil 25 ml

Grated lemon

Grappa 100ml

Seed oil for frying 700 ml

Powdered sugar to taste

Put the flour, sugar, grated lemon and oil in a bowl.

Add the eggs and gradually the grappa (in the absence of white wine or vermouth).

Knead the dough either by hand or with an electric whisk.

Transfer the dough to the work surface. Knead it and form a dough that you will wrap in plastic wrap and let it rest for 30 minutes.

Divide the dough into several portions and knead it individually. Roll out the dough by hand or with the pasta machine by rolling out sheets 2-3 mm thick.

Cut them into the shape and size of your taste. Make a center cut in each one if they are larger for better cooking.

Start frying with plenty of sunflower oil.

They are ready when they are puffed up and golden.

Place them on a plate with paper towels to remove excess oil and let them cool.
