A first course full of seasonal vegetables, healthy and tasty, which will appeal to young and old.

Ingredients (for 4 people)

Casarecce 300 gr.

Potatoes 200gr.

Zucchini 200 gr.

Carrots 100 gr.

1 medium onion

Celery 1 branch

Abundant basil

Zucchini flowers 6

Extra virgin olive oil 50 gr.

Pecorino 30 gr.

Optional chili pepper

Wash and dice the potatoes, carrots, celery and zucchini. Chop the basil. Slice the onion. Cut the zucchini flowers into strips.

Gently brown the onion with the oil.

Add the potatoes, carrots and celery. Cook for 2 minutes.

Add the zucchini and chopped basil. Cook for 5 minutes.

Add the zucchini flowers.

Add 150 ml of water.

Cook over low heat for 15 minutes.

Boil the casarecce -or tubettoni or scialatielli- and pour them into the pan with the pecorino cheese.

Mix well.

Serve and add a little more pecorino cheese and, if you like, the chilli pepper. Enjoy your meal with summer on your plate!
