A quick way to prepare cappelletti or tortellini by enriching them with sautéed vegetables. Simply good this first course that will satisfy you and your guests.

Ingredients for 2-3 people

Cappelletti 1 pack of 250 gr.

Peppers 1 (about 200 gr.)

Zucchini 1 (about 200 gr.)

Extra virgin olive oil 40 gr.

Philadelphia cheese 80 gr

Basil to taste

Parmesan cheese to taste

Salt to taste

1 medium onion

Cut the zucchini and pepper into cubes. Slice the onion.

Sauté the onion with the oil.

Add the vegetables and salt.

Cover with the lid and cook for 10 minutes over high heat. Remove from heat.

Add the Philadelphia cheese (half a tub). Stir gently.

Boil the cappelletti or tortellini or even another type of short pasta and pour them into the pan with the sauce. Add the coarsely chopped basil.

Stir gently on the stove for 1 minute, adding a little of the pasta cooking water if you see that it dries out too much.

You can serve with a sprinkling of Parmesan cheese as a final touch and enjoy!!
