As an appetizer or as a main course, this dish prepared with squid is ideal for a special occasion. I will prepare them for New Year's Eve. They are very easy to make and will certainly be a success!

Ingredients (for 4 people)

Squid 4 (about 1 kg.)

Breadcrumbs 150 gr.

Capers 20 gr.

Parsley to taste

Garlic 2 cloves

Extra virgin olive oil 60 gr

Salt to taste

White wine 100 ml

Clean and wash the squid well. Cut the side flaps and two tufts of tentacles into small pieces. Leave two tufts that you will divide in half because you will need them to reassemble the squid before putting it in the oven.

Brown half of the oil with the garlic and squid pieces.

Cook for 10 minutes and then put everything in a bowl to cool. In the same pan, add a drizzle of oil and toast the breadcrumbs for 1 minute over high heat.

Put the breadcrumbs in a bowl, add the parsley, capers and a clove of garlic chopped very finely.

Combine the squid pieces with all their seasoning, a pinch of salt and a sprinkling of pepper if you like. Mix everything well.

Fill the squid with the dough not to the brim, putting the tuft of tentacles at the end and closing with a toothpick.

Place the squid in a baking dish. Add a pinch of salt, the remaining oil and white wine. Sprinkle the squid with the rest of the dough if you have any leftovers or with a little breadcrumbs.

Bake at 180* for 25 minutes. The cooking will be perfect and the squid will be very tender.
