I will prepare stewed cod for Christmas Eve. Simple and tasty recipe that combines cod with a sauce prepared with abundant onion and flavored with anchovies. Served as an appetizer or main course, it is always a success!!


Ingredients for 4 people

Baccalà 500 gr.

Cherry tomatoes 400 gr. or 1 can of peeled tomatoes or hill tomatoes of 400 gr.

Extra virgin olive oil 50 gr.

Salt to taste

Anchovies 4 fillets

Onion 200 gr.

Basil to taste

Corn flour to taste

Olive oil for frying 100ml

After cutting, washing and drying the pieces of cod, flour them with corn and fry them in a pan where you have put olive oil.

Cook first on one side and then on the other.

Cut the onion and brown it in a pan with oil and 50ml of water.

When the onion has softened, add the anchovy fillets and brown.

Add the cherry tomatoes and season with salt.
Cook for 5 minutes over high heat.

Place the pieces of cod on the sauce.

Cook for 10 minutes over low heat and cover with a lid.
